Japanese sushi chefs use this knife and make sashimi.
It is “Takobiki hocho”.
It was used as a sashimi knife in the Kanto region of Japan (around Tokyo). It is characterized by its squared tip and the straight edge. Due to its long and straight edge, Takobiki can also be useful to cut things that are soft and have a large mass as Kanten (agar).
If you have this knife, you can make sushi also.
